The grapes were harvested and carefully selected by hand. Then they
underwent a cold maceration at 5ºC for two days. The fermentation
took place with selected yeasts in stainless steel tanks at 26ºC. For the
malolactic fermentation, part of the wine was racked into French oak
foudres as well as into concrete eggs. The wine was then left to mature
for 18 months.
Winemaker's Comments:
This wine is an attractive ruby-red colour. The nose is intense, with
notes of fresh red fruit, where cherries prevail. In the mouth, it is
smooth and fruity, achieving a perfect balance between the acidity
and residual sugar. The tannins are sweet, with a vibrant and juicy
finish.Carignan Sabio has a long, elegant finish.
Food Pairings:
Enjoy this wine with grilled oily fish or red meat which is not overly
seasoned. It is also an excellent complement for strong and creamy
types of cheese. Best served at between 16°C and 18°C.
